Day 7: Sunday Funday. Well...sort of

Day 7.  We made it a week!  And I have to say, I feel awesome.  The headache is gone, the sugar cravings are dissipating (sort of), and outside of Saturday night, I haven't even wanted a glass of wine.  I've slept better the past few nights (albeit with crazy dreams) and my mood has been down right chipper (for the most part).  23 more days? We got this.

It is truly amazing what you find when you start reading labels.  Sugar is in everything! No wonder I'm craving it.  Our biggest obstacle on week 1: finding sugar free bacon.  Luckily, we found some at our new fancy Whole Foods.  Phew.  Prior to that, we 'made do' with and an intake of pancetta and prosciutto to curb our salty pig cravings.  Thank god for the Italians.  They've helped to make our weekend afternoon nibbles enjoyable.

Why yes, that seltzer can does have Coors Light written on it.  Whatever is takes, right?

We have been trying out new recipes too.  They all have been good, but the crispy salt and vinegar potatoes were by far my favorite.  I basically followed the original recipe (link below), but when making them again, I'll do a few things differently. 

We used red potatoes, simply because that is what we had. 


Chopping was left up to the rookie in the kitchen, followed by boiling the potatoes in vinegar and water.  Then pan roasted in ghee (no butter on Whole30),

and tossed with salt and chives.  


They were so good.  Not salt & vinegar Cape Cod chip good, but good none the less.  They weren't as crispy as I would have liked, so next time I'll pop them in the oven after boiling them.  And we definitely added more chives then what was called for.  And more salt.  Always more salt. 

But I digress.  Now back to Sunday Funday.  It was probably the most productive Sunday we've had in the past year.  I joked that we need to have a party when this is all done to show off how clean our place is!

Those lovely potatoes made an appearance at brunch (crisped up in the oven this time).  Paired with leftover roasted brussels sprouts, crispy pancetta and a "whoops, forgot about it" poached egg, they were even better a day or two later.  


The 2 of us spent most of the day in the kitchen.  Being able to do this together is the one thing that helped us both get through the first 7 days.  It's nice to have a second set of hands to get our menus ready.

More roasted nuts and kale chips.  This time is we went even more savory on the nuts, tossing cashews in herb oil, rosemary and salt.  And to spruce up the kale chips, some toasted sesame oil and sesame seeds.

And chili.  A big ole pot of meaty chili.  There was no recipe.  Just pork, beef, mushrooms, onions, peppers, jalapenos, pureed tomato and stock.  And, of course, a whole slew of spices. 


Hot paprika, crushed red pepper flake, coriander, cayenne pepper, chili powder and cumin.  And salt and pepper of course. Might have been the best chili I've ever made.  Didn't even miss the beans.



On to a new week filled with new recipes.  And hopefully, a continuation of feeling good.
